Wijn met een prachtige expressie van voornamelijk syrah- en grenachedruiven, die zorgen voor de kenmerkende, milde kruidigheid en een aantrekkelijke, volfruitige smaak. Heel onderscheidend is de frisheid. Hierdoor is deze biologische wijn uitstekend te combineren met (kruidige) gerechten. En in de warme maanden is deze soepele Fransoos - eventueel licht gekoeld - nog lekkerder.

Wijnmaker François Collard vergist de druiven in betonnen vaten en vermijdt contact met hout voor het behoud van maximale fruitexpressie. De tannine laat hij zacht worden door vijftien maanden rijping in de tank.

Hij laat zien dat je in een relatief warme streek zoals de Costières de Nîmes, met een laag rendement in de wijngaard, zeer rijpe druiven mét een frisse smaak kunt oogsten. Hier dus geen confiture-achtige zoetheid, maar knisperend fruit en doordrinkbaarheid. Grote klasse, deze vurige, maar ook mild smakende Grenache-Syrah!

The NV Pedro Ximénez Solera 1927 is non-vintage, but does have some 1927 material in it. This is totally dark brown/ amber with notes of figs, toffee, caramel syrup, molasses and coffee. It is dense, super sweet, intense, rich and an amazingly, unctuously textured, thick beverage to consume slowly and introspectively after a meal. Drink now through 2050, or even longer.
